What it is
Apple cider vinegar is the product of two fermentations — apples to alcohol, then to acetic acid by Acetobacter bacteria. The cloudy 'mother' is the residue of those microbes.
How it works
Acetic acid appears to slow gastric emptying and modestly blunt the post-meal glucose spike. The capsule form preserves enamel; the liquid does not.
The protocol
1–2 capsules with each main meal, or 1 tablespoon in a large glass of water before meals.
Sourcing
Raw, unfiltered, with the mother. For capsules, look for third-party tested products with stated acetic acid content.
Honest caution
Liquid ACV erodes tooth enamel — always dilute and rinse, or use capsules. Avoid undiluted.
